Harvested early September and perfectly ripe, in order to develop a traditional high-quality method. Consisting of Cabernet Franc only, a grape variety intended to produce great red wines. Pressed as soon as it arrives in our cellars to minimize the contact time between the juices and the skin to obtain a white juice called ‘a white of black’.
Its bubbles are achieved in the greatest tradition of sparkling wines: second fermentation in bottles, aging on racks for 9 months, stirring then disgorging.
