Harvested early September and perfectly ripe, in order to develop a traditional high-quality method. Consisting of Cabernet Franc only, a grape variety intended to produce great red wines. A slight maceration before pressing the grapes as soon as they arrive in our cellars allows to obtain this unique pale pink color.
Its bubbles are achieved in the greatest tradition of sparkling wines: second fermentation in bottles, aging on racks for 9 months, stirring then disgorging.
